夏天这样做馒头,比酵母馒头省事又好吃

饮食常常能体现一个地方的特色。北方夏天吃馒头是常事,早上一碗稀饭几个馒头,搭配适量的咸菜是北方人常吃的早餐,这样简易又营养的早餐,足以体现北方人对面食的热爱,而山西人吃面食也是全国有名的,而这边人吃馒头大都是老面发酵的方式,老面馒头吃起来劲道、麦香、柔软、又白又大,吃过的人都知道这样的老式发酵的面食才地道好吃!

回老家就是能吃地道的面食。老妈经常给我们做各种各样的面食,花卷、馒头、各种菜馅儿包子、面条……凡是常吃的老妈都要做一遍。今天做了孩子最喜欢吃的奶香馒头,这样的馒头特别适合孩子吃,营养翻倍,口感柔软香甜,孩子特别喜欢吃!

制作配料:面粉300克 食用碱适量 小苏打适量 温水适量 奶粉20克

制作方法:

1、面粉用温水和成面团,放在温暖的地方发酵成蜂窝状;

2、发酵好的面团放入适量食用碱、小苏打;

3、直到面团变得蓬松又紧致,再加入奶粉揉均匀;

4、切开面团看有很多细小的空洞;

5、面团确定好碱水量,搓成长条,切成大小一致的小剂子;

6、均匀地摆放在蒸笼屉上;

7、开水上锅蒸15分钟左右即可;

【注意事项】

老面发酵的馒头最重要就是碱水量的控制,碱水量大了发黄,碱水量小了就发酵不起来,如果新手做,就要上锅测试碱水量是否合适;
